Need a dish to whip up before you head out to the cookout. Try this simple, refreshing and easy recipe.
Chunky Avocado & Corn Salsa
Serves 4-5
2 large avocados (firm not too soft) diced.
¼ cup red onion diced
2 ears of corn steamed and cut off cob (you can use frozen).
1 cup of diced tomatoes (I used cherry tomatoes)
¼ cup cilantro
½ tsp. salt (or as desired)
¼ tsp. pepper
Juice of two limes
Optional (1 diced jalapenos pepper for added heat)
Toss all ingredients together gently.
Serve with Tortilla Chips or anything you like!
